The winemaking process starts at the vineyards. We pay meticulous attention to every detail during the vineyard's growing season, followed by a winemaking process that treats the wine as gently as possible. Grapes are handled with much care, flows by gravity and the wine in barrel ages slowly in caves, with natural temperature and humidity control. To further preserve the delicate Pinot Noir and Chardonnay, racking of the wine is minimal, normally occurring just prior to bottling. Thanks to quiet, motionless months of aging in our caves, the wines get crystalline clear without requiring any further fining or filtration.
